Los Placeres Farm boasts Rainforest CertificationAlliance - a total of 28 hectares of protected area where no logging is allowedor hunting to preserve the localnature. Every year new trees are planted to provide shadefor the coffee trees and attract wildlife. An important variety grown on this farm is Ethiosar, which is a hybrid variety with complexincluding Sudan Rume, Sarchimore and Villa Sarchi. Ethiosar is resistant to coffee rust and offersa lively flavour profile. In 2021, it was the only variety to score 90+ in theLos Favoritos private auction in partnership with the Alliance for Coffee Excellence and the Cup ofExcellence.

The coffee beans are processed naturally with anaerobic fermentation (Funky Natural) - a special process that creates a unique coffee flavour profile. Includescontrolled re-fermentationof coffee cherries at hightemperature and commences with harvestingonly ripe cherries, which are harvested aftercarefully transported todrying room. The cherries are dried inthicker layer, which speeds upfermentation, and then strictlycontrolled to avoidcomplete overfermentation. This unique process ends with drying onAfrican beds and thenresting in a well-ventilatedwarehouse.
